We started with 7yo Havana Club. It's rich and complex and incredible just on ice. We lightened up the vermouth as the rum is aleady pretty sweet. We balanced it with grapefruit bitters. We batch it and age it, and all of those flavours round out into a cohesive whole. Then we bottle it.
