Why some of them live in the freezer

A drink that goes in the freezer never meets ice, so it never gets the water that ice would give it. We build that water into the recipe instead. The dilution is not a compromise. It is part of what brings the drink to life.

A drink that is not built for the freezer is simply one whose water arrives in the glass, from a big rock or a well chilled coupe. That is the whole of the difference, and it is why the serve is worth reading.
